Saffron: Everything About Safranbolu Saffron
Saffron: Everything About Safranbolu Saffron
Saffron is one of the world's most valuable spices. It is made by carefully separating and drying the red stigmas of the Crocus sativus flower.
Each saffron flower has only three red stigmas. Picking the flowers one by one, separating the red parts by hand and drying them under controlled conditions takes a great deal of work. This labour-intensive process is the main reason saffron is so valuable.
At Safran Orman Tarım, we grow our saffron on our own farm in Kırıklar village, Safranbolu, and follow every stage of production, from harvest and drying to lab analysis and packing.
Grown in Safranbolu. Confirmed by lab analysis. Straight from the grower.

What Is Saffron?
Saffron is a natural spice obtained from the flowers of the saffron plant, whose scientific name is Crocus sativus L.
At the centre of its distinctive purple flowers, which bloom in autumn, are three red stigmas. The product we know as saffron is made by separating these red parts from the flowers and drying them under suitable conditions.
For centuries, many cultures have used saffron to give food and drinks their own colour, aroma and flavour.
But not all saffron is the same. The growing region, harvest time, drying method, storage conditions and chemical properties can all affect its final quality.
That is why, when judging saffron quality, you should look not only at its appearance but also at its origin, production process, traceability and lab analysis.
What Is Safranbolu Saffron?
The link between Safranbolu and saffron is more than a shared name.
Saffron growing is part of the region's centuries-old farming and cultural heritage. Safranbolu Saffron (Safranbolu Safranı) is a special product registered as a geographical indication with a designation of origin.
Combined with the local climate and growing tradition, this heritage has made Safranbolu one of the places most closely associated with saffron in Turkey.
At Safran Orman Tarım, we carry this tradition forward with modern production and quality control methods.
We grow our saffron on our own land in Kırıklar village, Safranbolu, and track the quality of every harvest through independent laboratory analysis.

How Is Saffron Produced, from Field to Jar?
Saffron production takes patience, the right timing and a lot of handwork.
It all starts with Crocus sativus corms planted in the soil.
When flowering begins in autumn, the purple saffron flowers are picked with care. The three red saffron threads inside each flower are separated by hand and dried under controlled conditions.
At Safran Orman Tarım, we follow the product's journey from start to finish:

How Can You Tell Saffron Quality?
A common mistake when buying saffron is to judge its quality only by its colour or price.
In fact, saffron quality can be measured.
One of the most important international standards for assessing saffron quality is ISO 3632.
Under ISO 3632, three key parameters help assess saffron's main characteristics:
Crocin – Colouring Strength
Crocin and related compounds are linked to saffron's characteristic colouring strength.
They are one of the main components behind the golden tone that good saffron gives to hot water or food.
Picrocrocin – Flavour
Picrocrocin is one of the key indicators used to assess saffron's characteristic flavour profile.
Safranal – Aroma
Safranal is an important parameter for assessing saffron's distinctive aroma.
So, to look beyond the words “premium saffron”, checking the product's lab analysis is an important sign of quality.
Safran Orman Tarım ISO 3632 Lab Results
For us, quality is not just a marketing claim.
We measure the quality of the saffron we grow in Safranbolu through independent laboratory analysis, and we share the results openly with our customers.
Lab results for our latest harvest:
Parameter: Result
Crocin – Colouring Strength: 284 ± 18
Picrocrocin – Flavour: 105 ± 7
Safranal – Aroma: 36 ± 2
Moisture and Volatile Matter: 7.15 ± 0.28%
Our results meet ISO 3632 Category I limits.
Rather than simply describing our saffron's quality, we prefer to measure it and share the results openly.

How Can You Tell Real Saffron?
Because saffron is one of the world's most valuable spices, it is important to question the origin and quality of what you buy.
Rather than relying on a single feature, it is better to look at several criteria together.
1. Is the growing location stated?
The product should clearly state where it was grown.
2. Is the grower known?
Being able to trace the person or business behind the product matters for trust.
3. Is it made of whole saffron threads?
Check the physical structure of the saffron and how uniform the product is.
4. Is there harvest information?
New-harvest information and the production period make the product more traceable.
5. Is there a lab analysis?
Values such as crocin, picrocrocin and safranal measured by an independent laboratory allow an objective assessment of quality.
6. Can its geographical origin be verified?
Origin information matters especially for geographical indication products such as Safranbolu Saffron.
This is why, at Safran Orman Tarım, we openly share where we grow, how we produce and what our lab results show.
How Do You Use Saffron?
Saffron is a spice with intense colour, aroma and flavour.
That is why cuisines around the world use it to give dishes its distinctive aroma and golden tone.
You can use saffron in:
-
Rice dishes
-
Soups
-
Milk puddings
-
Baked goods
-
Sauces
-
Hot drinks
-
Traditional and modern recipes
Depending on the recipe, let the threads release their colour and aroma in a suitable liquid first, then add it to your dish or drink.
Because of saffron's character, even a small amount can give a recipe noticeable colour and aroma.
Why Is Saffron So Valuable?
Saffron's value comes not only from the plant it is grown from but also from its very labour-intensive production.
Each saffron flower contains only three red stigmas.
Picking the flowers during the harvest, separating the red parts one by one and then drying them under the right conditions takes a great deal of handwork.
And the journey of good saffron does not end at harvest.
Growing → Harvest → Separating → Drying → Storage → Analysis → Packing
Every stage in this chain can affect the quality of the final product.
So, when judging saffron's value, look not only at the price per gram but also at its origin, production method, harvest period, traceability and lab results.
How Should You Store Saffron?
To keep saffron's distinctive colour and aroma for as long as possible, it is important to store it properly.
We recommend keeping saffron:
-
Dry
-
Cool
-
Away from direct sunlight
-
Protected from moisture
-
In a tightly closed container
Not leaving it open for long and closing the container again after each use also helps preserve its aroma.
What Should You Look For When Buying Saffron?
When buying saffron, understanding what you are buying matters more than finding the cheapest product.
Before you buy, we suggest checking:
Origin: Where was the saffron grown?
Grower: Who is behind the product?
Harvest: Is the harvest period stated?
Analysis: Has it been lab-tested under ISO 3632?
Traceability: Can you find information about how it was produced?
Geographical origin: If it claims an origin such as Safranbolu Saffron, can this be verified?
Packaging: Is it properly protected from light, moisture and other external factors?
