What is Safranbolu saffron, and what makes it different?

Safranbolu saffron comes from the red stigmas of the Crocus sativus flower grown in the Safranbolu district of Karabük, Turkey. On 17 January 2024, Safranbolu Saffron (Safranbolu Safranı) was registered in the European Union as a Protected Designation of Origin.

We grow our saffron in our fields in Kırıklar village, Safranbolu. During the October–November harvest, we pick the flowers by hand in the early morning, separate the red threads one by one and dry them the same day. It takes about 150–200 flowers to make 1 gram of saffron.

Our 2025 harvest was analysed by the independent laboratory Mérieux NutriSciences – Chelab in Italy using the ISO 3632 method. Its colouring strength (crocin), flavour (picrocrocin) and aroma (safranal) values meet ISO 3632 Category I limits. You can see every value on our Lab Results page.

We sell Safranbolu saffron in 1, 3, 5 and 10 gram glass jars. Everything about using and storing saffron is in our Saffron Guide. Shipping within Turkey is free, and orders ship within 2 business days at the latest.
